Avocado Smash (with a Twist!)

Last month in New York, I was in food Heaven. Like, take me now- I had THE donut that I wrote about in my Deathbed Eats blog and it was magical. But because I can't order JUST donuts for breakfast (well actually, I can, but, that didn't happen this time), I ordered the best-ever Avocado Smash on Toast to accompany the warm brioche donuts oozing with vanilla rum custard. *drool*

Since that mashed avo-experience, I've been wanting to make my own. Sure, it's a piece of cake to smear some green goodness on a piece of bread, but here are some helpful KISS Tips to ensure the perfect avocado smash that will leave your mouth watering and be the envy of the neighborhood.
Picture
KISS Tip #1: Begin by mashing the avocado in the avocado itself- this pre-mashing ensures you don't have to mash on top of the toast... because no one wants a crater in their bread.

KISS Tip #2: Choose a HEARTY bread. That low-cal, "white" wheat, fake fiber stuff ain't gonna cut it. Choose some grainy bread with serious turgor and throw a few pieces in the toaster

KISS Tip #3: Choose an opposing flavor to top your mash with. Since avocado is smooth and creamy, think tangy, spicy, salty or even sweet.

KISS Tip #4: Watch it disappear almost instantly.

KISS Avocado Smash
Serves 2

Ingredients

4 slices hearty whole grain bread
2 small avocados or 1 large avocado
1/2 medium mango, thinly sliced
red pepper flakes or seasoning of choice

Instructions
1.) While bread is toasting, cut the avocado(s) in half and remove pit. Using a fork, begin to gently dislodge/mash the avocado while it's still in the skin.
2.) Evenly spread the avocado on warm toasted bread.
3.) Top with mango or other topping of choice- kiwi slices and strawberries work well, as do poached eggs and arugula.
4.) Lightly Sprinkle crushed red pepper flakes or seasoning of choice. Try to chew before you swallow... it's that good.

Hi Lauren! Thanks- I finally figured this out after too many "craters" I'd made in my toast ;).

Such a great idea! Avacados are my favorite and I would not have thought to combine it with mango!

"I really enjoy working with Shannon - she helps me make manageable changes to my life that are effective and lasting but not so drastic that they seem like an impossible challenge. Over the course of the time we have worked together she continues to challenge me to continually improve but is never judgmental if I have slip up a bit. She is always positive and professional and I would highly recommend her to anyone seeking to make positive changes to their lifestyle!"
