WAIT- yes, you read that right- the nutrition of canned foods. I get questions all the time to the tune of "I know fresh and frozen food are okay, but what about canned??". My answer is always that all forms of food fit- including canned fruits, vegetables, seafood and legumes. And now I'm happy to share that there's some really exciting new research to further support more canned food in our diets!

1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) mango slices, drained, rinsed and diced into 1/4 inch pieces
1 can (15 ounces) whole kernel corn, drained and rinsed
1/3 cup coarsely chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon garlic powder
1/4 teaspoon ground cumin
1.) Combine beans, mango, and corn in a medium bowl.
2.) Stir in lime juice, garlic powder, cumin and cilantro.
3.) Add additional lime juice and cilantro if desired, and enjoy with your favorite whole grain or corn chip.
