Time: 10 minutes
Makes: 4 cups (4, 8oz mason jars)
1 1/2 cups gluten-free rolled oats
4 tsp ground flax seed
2 cups plant-based milk (I used Ripple Unsweetened Vanilla)
1/2 cup soy vanilla yogurt
1 cup blueberries
1 Tbsp fresh lemon zest
1.) Place all ingredients in a medium mixing bowl with a pour spout and mix until ingredients are well combined.
2.) Pour or spoon oatmeal into 4 mason jars and top with additional blueberries.
3.) Place in fridge overnight or for at least 8 hours. Enjoy!
