Nutty Citrus Energy Bites

Happy Spring, y’all! Well I loosely promised this recipe to go live by Spring Break, but I missed the mark on our Texas Spring Break. I’ve found here lately I’m stretched extra thin and sometimes it boils down to time with family or time with work.. and I want to continue to choose family! So that means waiting longer for recipes sometimes and I really appreciate y’all’s patience!

​Energy bites have always been a favorite snack of mine, but I tend to go through seasons where I make them more than others. This is definitely a season where fast wholesome snacks that I made ahead of time are a must. My Creamy Cashew Lemon Bites have been a hit for the past couple years, but I wanted to make some orangey bites and these are perfection!

This recipe is super forgiving and you can personalize it with your favorite nuts! I chose pecans and pistachios because I had them on hand and was just craving that combo. I’ll definitely be making these again with those 2 nuts and highly suggest you try it also! You can also add in some chia, hemp or flax seeds but I just wasn’t feeling very seedy so I passed :).

KISS Tip: If you do add seeds, oats or any other dry ingredient I would suggest soaking the dates in water to add extra moisture. I used some really soft and fresh dates without any seeds so they didn’t actually need to be soaked but that’s a quick way to make energy bites more blendable in the food processor and the perfect consistency to roll into balls.

KISS Nutty Citrus Energy Bites

Servings: 12 bites

Equipment

  • Food processor

Ingredients

  • 1 1/4 cup dates
  • 1 cup your favorite mixed nuts (I recommend pistachios + pecans)
  • 1/4 tsp salt
  • 1 tsp dried orange peel

Instructions

  • Add all ingredients to a food processor and blend until well combined and a coarse sand-like texture.
  • Remove about a tablespoon amount and roll in your palm to make sure you don’t need to adjust the ingredients to reach a more rollable texture*.
  • Roll into balls and store in air-tight container in the fridge for up to a week.

Notes

*Using different nuts, variable date size or if you add other ingredients can effect texture
