Key word- PEACHy. I'm convinced the selection of fruit is crucial for overnight oats. I'm a huge fan of fresh sliced bananas on my stovetop oats, but not overnight. Same goes for berries- the change in the fruit texture overnight(s) just doesn't do it for me. BUT peaches! and cinnamon! it just might make you think "let's hurry up and go to sleep so I can wakeup and eat again".
2 cups rolled oats
1 1/2 cups milk
1/2 cup vanilla Greek yogurt, non-fat
1 15 oz can peaches (in water, own juice or 100% juice), or 1 1/2 cups fresh or thawed diced peaches
4 tsp ground flax seed
1 tsp (heaping) cinnamon
1 Tbsp honey, agave or sweetener of choice
1.) Rinse canned peaches and chop evenly.
2.) Combine oatmeal, peaches, milk, yogurt, flax, cinnamon and honey in a large bowl.
3.) Mix well and refrigerate overnight in large bowl or divide evenly into 4 mason jar or small storage containers.
4.) Stir well, and enjoy cold or warm in microwave for 30-45 seconds.
