To this day, my mom still talks about his steak. And I often think of his delicious. eggs. They weren't just any eggs... they were a little something he liked to call "The Seitzer Scramble." Potatoes + eggs + turkey or ham + tomatoes + cheese = *drool*. And making the recipe for this blog takes me back to childhood. Isn't it neat how certain smells immediately evoke memories?
8 eggs, beaten + 2 Tbsp milk
1 large potato, peeled and diced
2 roma tomatoes, diced, seeds removed
1/3 lb deli meat (turkey or ham)
3/4 cup reduced fat shredded cheddar cheese
salt and pepper to taste
2 tsp avocado oil
1.) Heat oil over medium heat and add potatoes. Cook until almost brown (about 5-7 minutes).
2.) Add deli meat and cook additional 2-3 minutes.
3.) Push deli meat and potatoes to side of skillet and pour in beaten eggs (milk should be added to eggs before pouring in skillet).
4.) Scramble eggs as usual, slowly incorporating potatoes and deli meat.
5.) Add tomatoes and cook for 1-2 more minutes. Remove from heat.
6.) Sprinkle cheese on top (mix in if you like) and enjoy!
