Golden Mango Smoothie

Happy Earth Day, guys! I think Earth Day is a great day to celebrate year round by making efforts to preserve our planet and make smart choices. The Recipe ReDux has challenged all its members to create recipes showing how we can use leftovers and scraps to reduce food waste! The timing was perfect as I found myself with a surplus of fruit. I recently made a Ahi Mango Poke Bowl (#drool) and had plenty of mango that needed to be put to good use!

​I also seem to always have leftover lemons or lime slices and I don’t know about y’all- but does anybody actually go through spice bottles in a reasonable amount of time? I don’t even know what a “reasonable amount of time” is, but I’m always looking for creative ways to use spices so they don’t become less potent with time. So basically the equation is mango + lemon + turmeric = dream smoothie.

Turmeric has become such a trendy addition and I’m not gonna lie, I hopped on the goldenmilk and goldenmilk latte train a few months ago and haven’t looked back. However, I hadn’t actually added turmeric to my smoothies and it was about time!

I love to add lemon to smoothies and this Strawberry Banana Lemon Smoothie was quite a hit last Spring! By adding citrus to smoothies it gives it a little zing, plus you get it keeps you from throwing out those extra lemon and lime slices! Every little thing we can do to use our leftovers and not let food go to waste, adds up. I’d love to know what tips and tricks you have for not letting food go to waste!

Golden Mango Smoothie

Total Time5 minutes
Servings: 2

Equipment

  • Vitamix or high-speed blender

Ingredients

  • 2 1/2 cups frozen mango
  • 2 cups unsweetened Ripple milk (my favorite!) or other milk of choice
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp turmeric powder

Instructions

  • Place all ingredients in high-speed blender or Vitamix and blend until smooth.
  • Garnish with additional turmeric, if desired. Enjoy!

  1. That spoon is the cutest! I still have yet to try using turmeric in my smoothies, but I’m definitely going to need to! This looks so good!
